Bermuda Native Readies Ridgewood Cafe For Spring Launch

RIDGEWOOD, N.J. — Heidi's Finest's former East Ridgewood Avenue location will have a new tenant this spring, and he plans on dishing up a holistic twist on American cuisine.

Bermuda native Ryan Brining, 28, of Wyckoff, is readying the space at 47 E. Ridgewood Ave. for the grand opening of White Maple Cafe.

The menu is under construction, and Brining — a first-time business owner — is hoping facility improvements will begin soon.

"I’m really looking forward to getting open at this point," said Brining, who helped relaunch the Rainbow Room in New York City, and has been working with famed French chef Daniel Boulud.

The owner doesn't want to give too much away just yet, but has confirmed that bison burgers and a rotating selection of vegetarian options will be offered daily.

"It's a relatively focused menu to produce as much as possible in house," said Brining, who plans to feature local and seasonal items. "We want to be able to produce the best possible food.

"Getting to open is going to be a relief, but that's when the real work starts."
