For instance, La Griglia in Rimini, Italy on the Adriatic Sea.
And La Vecchia Romagna, also in Rimini – the town where Dulli's Albanian family moved when he was a boy.
“Pizzerias are fun to me,” said Duli, 42, who opened Toscana last June.
“Pizza is easy to make and it’s a pleasure to see people enjoying it.”
Toscana Pizza, named for a region in northern Italy west of Rimini, is known for its thin crust pies (though it makes Sicilian ones, too).
Duli especially enjoys working with Al Gashi, 37, of South Hackensack. When it comes to pizza, Duli calls Gashi “the very best.”
At Toscana, there are a lot of secret authentic recipes at work.
Secret dough.
Secret sauce, too. There’s a very particular tomato Duli and Gashi like to use. They import it from Italy.
Ditto for the cheese.
If you’re going to make an old-style, old-fashioned pizza, Duli said, you’d better get the best ingredients in the world from the old country.
So far, so good. People like Toscana Pizza.
Duli points to a poster on his wall that he got, compliments of the CEO of Yelp: “Congratulations!” it reads. “People love Toscana Pizza on Yelp.”
Before opening Toscana with its array of pizzas – including Chicken Milanese, Four Seasons, Chicken Parm, Shrimp, Penne Vodka, Capricciosa and many more – Duli worked for 16 years in other people’s kitchens, here and abroad.
“Having worked in restaurants and pizzerias and managed others’ businesses, and with the help of family and friends,” Duli said, “I decided to open my own place.”

The pizzeria also makes personal gluten-free pies as well as other Italian classics, including meatball heroes, sausage and pepper sandwiches, calzones, chicken, pastas and much more.
